OK, as a sitar player (i love saying that) strings are DEFIANTLY an issue, they are hard to find and with the tuning systems on mainstream sitars, (e.g. not homemade, not using a gear tuning peg like on a guitar) it can be very easy to break a string, not to mention with 17 sympathetic strings (say that 5 times fast) you are bound to turn a wrong peg, and not to mention again, you have to tune it a lot, (and i mean a lot) and so i came across this man on the youtubez who makes his own instruments using complete scrap wood, wood that he finds, anything that he finds, so the whole thing is free aside from some strings or something, but what he does A LOT is use carbon fiber mono-filament as string! i tried it to replace a broken chakari string on my sitar, works FLAWLESSLY, although it can be a bit iffy having to tune it a bit more often, it it a life saver. and i also tried it with my broken guitar string, worked ok, i would only use that to hold me over until i could get more, but still not bad, that needed constant adjustment to the tuning, but still not too bad
